In 1993, Dodie Miller, who began importing a wide variety of dried chili peppers from Mexico to the United Kingdom, founded Cool Chile. Dodie sold the chili peppers he brought from a stall in the Portobello Market and later in Borough. Meanwhile, each time he traveled to Mexico, he tried the various flavors of the country's cuisine and, upon returning, prepared a variety of sauces and pastas with the imported chilies.
In 2005, due to a lack of fresh corn tortillas in the United Kingdom, Dodie and his team imported a tortilla machine, which they called "Lupita". After working for 3 years and having reached the point of not meeting the demand, she was replaced by a larger one, this time called "The monster" and who is currently in charge of producing the company's corn tortillas.
Cool Chile has been importing dried chilies, herbs and flour from Mexico for more than 20 years. The chiles come whole, diced, and powdered, and the tortillas are made fresh daily with no preservatives or gluten. Today all products are offered online or can be picked up from the established unit at Park Royal.
